Production Line Overview
Serna Makina short-cut pasta production lines are designed to manufacture penne, vermicelli, fusilli, elbows, macaroni, shells and similar short pasta shapes.
Our production lines are engineered according to the required capacity and product range, integrating dough preparation, forming, cutting, drying and cooling into a complete process.
For every project, Serna Makina considers the operating conditions and customer requirements to deliver efficient, reliable pasta production lines designed for long-term use.
The entire process chain, from raw material feeding through extrusion, forming, drying, cooling and conveying to storage, is integrated with the automation system.
System Features
Production Process
The short-cut pasta production process begins with controlled raw-material feeding and continues through shaping, drying, cooling, conveying and storage.
Raw materials are fed into the line in a regular, controlled manner. In the press (extruder), the dough is kneaded to a uniform consistency, compressed and shaped through circular pasta dies.
Surface moisture is reduced in a controlled manner as fresh pasta passes through the shaker (trabatto). The product then reaches its target moisture level in a multi-tier dryer under controlled temperature, humidity and airflow.
After drying, pasta is cooled under controlled conditions, transferred between different line levels by bucket elevators and held in resting and storage silos before packaging.
Production Line Components
All production stages, from raw-material feeding to pre-packaging storage, are connected through controlled product flow, process continuity and integrated automation.
Raw-Material Feeding Unit
The raw-material feeding unit provides regular, controlled and reliable feeding at the first stage of pasta production.
Designed for the required capacity and process conditions, it supports efficient raw-material storage, conveying and supply to the
Press (Extruder) Unit
The press (extruder) is a core line component that kneads dough uniformly, compresses it and shapes it through dies.
The system feeds dough to the dies continuously under controlled conditions and can be configured for different pasta shapes.
Circular Pasta Dies
Serna Makina supplies custom-designed circular pasta dies for different pasta shapes and production requirements.
Designed around product geometry, dimensions and operating conditions, the dies enable consistent and controlled shaping of pasta dough.
Shaker (Trabatto) Unit
The shaker (trabatto) unit removes surface moisture from freshly extruded pasta under controlled conditions, helping retain product shape and stabilize its movement along the line.
Acting as a pre-drying stage, it reduces sticking and deformation before the main drying process.
Drying Unit
The drying unit is a key production stage that brings pasta to its required moisture level evenly and under controlled conditions. Serna drying units are designed for product quality, uniform drying and stable output.
The staged system, comprising first and second drying units, has multiple tiers of specially designed drying belts. Each tier enables controlled product movement and an orderly drying process.
Cooling (Shock Cooling) Unit
The cooling unit cools pasta under controlled conditions after drying, preparing it for storage and packaging.
Controlled cooling helps maintain the balance of product moisture and temperature and supports suitable transfer to subsequent stages.
Bucket Elevator
The bucket elevator conveys pasta regularly, safely and under controlled conditions between different levels of the production line.
Serna bucket elevators are designed for different production capacities and line layouts.
Resting and Storage Silos
The silos provide controlled product storage and a steady flow between production and packaging. Configurable for different capacities, the system allows pasta to be stored under balanced conditions and fed to the packaging line in a controlled manner.
Serna Makina approaches short-cut and long-cut pasta production lines as integrated systems in which mechanical equipment, process technology and automation operate together. From raw-material feeding and shaping to drying, cooling and storage, each stage is engineered for controlled product flow and process continuity.
Production lines are designed to adapt to different scenarios based on target capacity, product range and plant requirements. The scalable configuration supports various pasta shapes while enabling controlled process parameters and operational continuity.
Auxiliary systems complement the main production lines by supplying essential utilities such as steam, cooling water and compressed air, as well as packaging and die-cleaning functions. Boilers, chillers, compressors, packaging machines and die washers are configured to process requirements to support reliable line operation.
